 If you were to take a picture of us and compare it with one taken here fifty years ago, you’d see very little difference. The only difference, perhaps, would be in the clothes. Fashions change, but we still peel, clean and package fish in the same way: by hand.

 Those of us who work with such a special product as the tuna belly put all our efforts into it. We know that, by taking care of each portion of tuna belly, we are taking care of our product, and also of its well-deserved reputation as a delicacy of great taste and nutritional quality.
