We fish the octopus in Atlantic waters respecting its life cycle, i.e. at the time that is least harmful to the species. In addition, we fish only for males. Females are returned to the sea.
To catch it, we use pots, which is a sustainable fishing device with minimal impact on the seabed.

You’ve surely heard of ‘scaring the octopus’ at least once. Those who understand this cook it according to the tradition of immersing it in boiling water for a few seconds and taking it out again several times.
Why? This is to ensure that the meat is tender. The sudden change in temperature when placed in boiling water breaks down the collagen in its fibres. This is how you get the perfect texture.

This process requires us to spend time with each octopus, one by one, but the result is worth it. This is how we obtain the ideal texture, the perfect cooking point.
