SARDINES IN OLIVE OIL

Canned sardines are as nutritious and delicious as they are convenient: a must have in any home. If they are also of high quality, they are a real gastronomic gem.

The first thing to say about quality canned fish is that it must be prepared with fresh fish, of course – never frozen! That’s how we make them here.

The women of the sea who make Rosalita’s canned sardines are located in Galicia. And not to brag, but we know a thing or two about good fish here.  Read on to learn the secrets of the best canned sardines!

The sardines in Rosalita’s preserves are of the Pilchardus species, the tastiest and most highly valued. They are fished in the Atlantic using seine nets. When a shoal of sardines is located, the net is cast and the boat makes a 360-degree turn to encircle it.

 This method has been used for many years. Nowadays boats are bigger and more powerful, and the nets are of better quality, but the technique has changed very little since those days.

 The flavour of Atlantic sardines is more intense than those caught in the Mediterranean, because here we have colder and more churned waters, and the fish comes out tastier. They are finger-licking good!

 Canning sardines in oil does much more than preserve the fish. The sardine is hydrated with the oil, the flavours are mixed and a process begins that’s not that different from alchemy, where the final result is more than the sum of its parts.

 Once the heads and the bones have been removed, we toast them very lightly. This is a traditional process that softens the spine and leaves the flesh with the perfect texture. We place them in the tins by hand, arranging them one by one, and cover them with refined olive oil.

 The spine of the preserved sardine can (and should) be eaten, as it softens during the process. So canned sardines give you extra vitamin D and up to three times as much calcium. Canning improves the nutritional properties of this fish, which is already an important source of nutrients.
