SARDINES MILLESIMÉ
Gran Reserva… canned? Of course! Some things get better with time, and canned sardines are one of them. If you’ve never heard of sardines millesimé or ‘cellar sardines’, you are about to discover a new gastronomic pleasure, on a par with the best cured hams, aged cheeses and reserve wines.
Preserved sardines millesimé are left to rest for months or years. In this way, the fish is hydrated with the olive oil, the flavours and textures mix, and the sardine is confit.
The result is a copper-coloured sardine with an intense flavour and smooth texture, in which the skin and scales are not visible. Quite an experience! Did you know that there are ‘sardine lovers’ clubs? Take a look…
origin
The first step in obtaining quality millesimé sardines is to use high quality fresh fish. Rosalita’s sardines millesimé are of the Pilchardus species, the most popular. They are caught in the Atlantic, and are processed while they are very fresh. No freezing.
The cold, churning waters of our sea make the sardines tastier and their flesh smoother than those caught in the Mediterranean. In addition, seine nets allow fish to be removed with little or no damage. This is how to achieve optimum canning quality.

Tradition
Only the best quality canned sardines can be cured ‘in the cellar’ to delight sardine lovers. And Rosalita’s preserves do just that.
So how do you recognise a great canned sardine?
In addition checking the can to ensure the sardines are fresh and hand-processed, sardine lovers also pay close attention to the sensations they perceive when opening the can. The smell should be mild, with a hint of the smell of the sea.
The sardines must be presented ‘au blanc’, i.e. with the belly facing the opening. This shows at a glance whether the evisceration has been carried out with proper techniques. There can be no abrasions and the sardine has a bright copper colour, which ensures the freshness of the fish at the time of packaging.

craftwork
When you see a can of tinned food, do you think all the work is done by machines? Not at all! Rosalita’s are prepared in the traditional way. There are some things that machines simply can’t do, at least not to the required level of quality.
We select and clean the sardines one by one with our hands, and we also can them by hand. This ensures that the gutting is perfect and the appearance when the can is opened is impeccable.

flavour
that nourishes
Canned food not only keeps the food in good condition, but also preserves its nutrients. All the nutritional virtues of sardines, of which there are many, are maintained, and extra ones are added.
Sardines provide us with all the advantages of oily fish. They are a great source of omega-3, vitamins, protein and minerals. Science has shown them to be good for the heart, circulation, metabolism and they have also shown to prevent anaemia.
Did you know that canned sardines provide more nutrients than canned sardines? This is because when we eat fresh sardines, we discard the bones, which are so rich in vitamin D and calcium. Remember this when you eat canned sardines again, the bones are very nutritious!
